Pomegranate Ginger Paloma

Ingredients 1/2 cup honey
1 inch fresh ginger
8 fresh mint leaves
Kosher salt, for rim
1/4 cup grapefruit juice or about half a grapefruit
1 tablespoon lime juice
2-4 tablespoons ginger syrup or to taste
2 ounces silver tequila or to your liking
1/2 cup pomegranate juice
Ginger beer or sparkling water
Pomegranate arils and candied mint, for garnish
Ginger Syrup
Combine 1/2 cup water, the honey, ginger and mint in a small saucepan and bring to a low boil; simmer 1 minute and remove from the heat. Cover and steep for 5-10 minutes. Strain and let the syrup cool. Store in the fridge.
The Drink
Rim your glass with a lime and dip in salt. Fill the glass halfway with ice. Add the grapefruit juice, lime juice, 2-4 tablespoons ginger syrup to taste, tequila and pomegranate juice and gently stir. Top with ginger beer. Drink. Cheers!
